Little Millet, known as Samai (சமை) in Tamil, is a small-grained, gluten-free ancient millet. It is rich in fiber, iron, B vitamins, and antioxidants, making it a wholesome substitute for rice or wheat. Little millet is especially valued for its low glycemic index, making it ideal for diabetics and those on a weight loss or heart-healthy diet.

It is commonly used in dishes like pongal, upma, khichdi, porridge, dosa, and idli.

1. Storage:
Store in an airtight container in a cool, dry place away from sunlight and moisture.
In humid climates, it's best to store in the refrigerator or an airtight zip-lock pouch inside a container.

2. Pest Prevention:
Add dried neem leaves, bay leaves, or cloves to the container to prevent insect infestation.
Avoid storing near the stove or wet areas.

4. Handling:
Use dry hands or a dry scoop to avoid introducing moisture.
